Flavorful Rustic Pumpkin Bundt Cake

 Best Pumpkin Bundt Cake EVER!





Our family is definitely into Fall cakes, muffins, and breads. I roast our own homegrown pumpkins, puree the squash(yes, pumpkin is a squash) and freeze in 2 or 3 cup bags. Thaw out the pumpkin in a strainer and you have delicious fresh pumpkin for your recipes.

Makings for your cake.


I use bagged apples for baking, these are Galas.




Rustic Apple Pumpkin Bundt Cake                         Oven 350 degrees
Serves 8-10                                                                45-50 min

Ingredients:(Lots of ingredients, but that is what makes this cake so special and flavorful)

2 cups of Flour (I use 1 cup of unbleached and 1 cup of whole wheat pastry flour)
1 tsp. baking powder
½ tsp baking soda
½ tsp salt
1 tsp cinnamon
½ tsp nutmeg
½ tsp cardamom (optional)
½ tsp cloves
¼ tsp of ginger
10 Tbsp. of salted butter softened (1 ¼ sticks)
1 cup of sugar
3 large eggs
1 cup of pumpkin puree (canned or I use fresh baked pumpkin drained and pureed
2 tsp of vanilla extract
2 cups of diced apples (approximately 2 large or 3 medium) with peels.
1 cup of chopped pecans
1 cup of raisins

Preheat oven to 350 degrees



Measure dry ingredients into a sifter. (I sift twice since I use heavier flours.) Sift and put in a bowl. The green handled sifter is an antique---very useful. It has two lids so you can sift, flip and then sift again...VERY convenient and throughly mixes spices into the flour! It was my grandmother's. 

In mixer, cream softened butter and sugar until light and fluffy. Beat in 1 egg at a time, combining completely.

 Add the pumpkin and vanilla and blend well. Add flour 1/3 at a time until totally combined. 



Dough will be stiff, add chopped apples.


The apples will loosen up the dough. 





Dust your raisins with some of the sifted dry ingredients.



Fold in raisins and chopped nuts.

Generously spray or grease your Bundt pan. Spread batter evenly and bake for 45-50 min or until cake turns golden brown and tester comes clean. Remove and wait 5 mins. Run a knife carefully along the edge to make the cake easier to remove after the waiting time. 



Invert on a plate and sift powder sugar over---OR----




I make a simple syrup of 2 Tbsp of butter, 1/2 cup of chopped pecans, 1/4 tsp of cinnamon, 1/2 cup brown sugar.  Lightly brown nuts in butter in sauce pan, add brown sugar and stir until smooth. Add 2 Tbsp of water, cook on low to make a thick syrup. (I cook this until the syrup doesn't roll off the spoon quickly but in slow drops, and then pour over the warm cake slowly.)  




Enjoy! I’ve taken this cake to so many parties/meetings and it always disappears. No leftovers, sigh!

My Un-decorating Decorating 2024

I don't have the January blues yet, but I do have the January LAZIES! If that is a word.

I didn't have tons of Christmas to take down this year, really just a few bits and here. The village is staying up as long as it is a snowy wonderland outside, it can stay up. The warm lights are so lovely in the long evenings.

It's no secret we have SNOW in Chicago. After a couple of years with basically nothing, and icky gray, black brown dead stuff, the snow is pretty and cold today.

Decorating---how about a snow shovel, that I was too tired to put away! We are getting old for shoveling snow, the blowers wouldn't take, but we went out twice and with a neighbors help managed to clear our 6 car driveway three times.

 Hubby says there is a drift out there again...which we will ignore and move our cars over, he is off to get SALT again.

Inside I'm picking a bit here and there in the kitchen to clean and refresh. I did some drawers and shelves, but the kitchen is pretty much just everyday.

I hang on to a bit of red through Valentine's day, and then I will green/Spring-ify a bit. Right now, this is what will stay until we start our seedlings.

I did get a fun new item...a cake cover just like my grandmother's and my hubby's grandmother's. I think my grandmother had little people around hers, but something in the plaid pattern memories

made me have this.

I love that is not in perfect condition and still 100% usable. A fun vintage/antique red item for the kitchen.

The cabinet is just set as usual, with a bit of red, and well the cookie tin with the snow scene is perfect for now!

Outside is pretty deep in snow. I'm glad I have the warm gold on the garage walls to look at, and who doesn't love a cranberry Red door!

My green plants are surviving despite a couple of weeks of no sun. Of course sun in winter means really COLD! Look at that fence...cemented in snow icing and the mounds on our line of garbage cans.

My little garden gnomes never got packed away, they just playing in the cupboard.

Gnomes are serious squatters, but they make me smile. Part of my heritage I guess.

The Danish Flag was my grandmother's and is real silk, so probably from the 1940's or earlier. Denmark has the oldest existing flag of any country dating back to 1625. An even older form has been traced back to the days of the Magna Carta in the 1000's 

Today: Special Congratulations to King Frederik X of Denmark as he takes the throne today.

His mother, Queen Margrethe abdicated in favor of her son after 52 years on the throne. 

Denmark is a constitutional monarchy and a parliamentary democracy. The Danish Constitution (Grundlov), adopted in 1849, is one of the oldest Constitutions in the world.

Fall Touches in our Vintage Kitchen

Fall Touches...I looked around the kitchen this morning and it was clean for a change. Yesterday I scampered about the yard, battening down the hatches because of a wind/storm threat and snapped off a bunch of flowers just in case they got wiped out.



A little of this and that, as I've said before our summer was so hot and the flowers were stunted and now are exploding everywhere, just in time for the frost.

The arrangement echos all the colors in my fruit thrift store tablecloth. Nice and wide and long for our large table and only $2.99 never washed tag still on it. 

Behind the table in the corner is the hutch. I only added my few hydrangea blossoms to dry. I haven't located any major fall decor---as our basement is still in plumbing alteration mode. ---meaning I can't find anything.

My container is an old porcelain tea canister I found this summer. It has transfers on all four sides...and in my favorite blue and white.

Add a stuffed pumpkin and my mom's antique coffee grinder.

My cookbook counter has a coordinating??? tablecloth in soft fall tones. We had a frost warning last weekend, so I brought in the plants I winter in the house over the weekend.

My Rex begonia I thought was dead---but revived in the cooler days. It also has an annual impatiens and a grass. We will see what makes it.

We love naturals, and here are some gourds and mini pumpkins. Some from my plants fostered and a few E planted in her backyard. Funny my gourd plants did nothing here and she had tons of gourds---all different kinds.

Another thrift store find...this sweet kitty pumpkin...her ears are scraped a bit, and Im tossed between painting them or scraping them some more...

The Mandilla is on the end in full bloom---and twining away...Happiness is Homemade sign---only new thing I purchased for Fall---at 70% off. Honestly the seasons are so rushed in the stores now...it's crazy. Life is flying by enough, already.

We had many a gathering here with family this year. We are having Thanksgiving this year, but not much else.

I love sunflowers...and pulled out a faux bush, now that they are done in the yard.

Normally if I serve buffet style off the island. I can't remember what it was like when this kitchen didn't have the island. It functions so well...and this little end I always have something going on! Right now it is 'harvest' for sure. Antique pickling crock, enamel coffee pot, grandmother's crocks, more gourds and peppers that are to go to our neighbor---we had SO many this year.

The sink is seldom empty, and here is the basil I need to process for the refrigerator and freezer. I need to buy garlic, olive oil and pine nuts to make pesto, this afternoon.
I still have to dry a huge crop of Sage and Majoram. Also, bring in the Thyme and Parsley plants.

The busiest place in the kitchen is our coffee station....pumpkin spice is always nice!


Staples, actually some need filling...

The workaholic in the kitchen the toaster/convection oven. Use this constantly for two people...it's perfect. Plus throws off less heat in the summer. Now we turn the stove oven on for dinner and taking the chill off.

I haven't done anything above the stove, yet. I still have some heirlooms that are inaccessible at the moment planned for this shelf! 
Almost everything is inherited or thrifted in our home.
 I love the hunt and let's face it, old stuff was made to last!

Last bit of clean counter---more staples...in our family antique blue jars. My mom-in-law's Kitchen Aide. Love it, except it is so HEAVY! My old mixer went to my kids.
