Homemade Pancake Waffle Mix for Santa

Always Ad-Free Blog

Christmas morning homemade waffles. 
The mix is a simple mix, I make and keep on hand at all times for pancakes or waffles. This is a gluten recipe, but I'm sure could be adapted for those with issues with gluten.

Besides the mix, you need vegetable oil, buttermilk or milk and eggs.

In season I use fresh fruit, out of season I use frozen berry medleys or the berries of your choice cooked down with juice. Today I used cranberry juice cooked with blackberries, cherries, strawberries and raspberries. I don't add sugar, but I thicken it with a bit of cornstarch and a pinch of vanilla extract maybe 1 tsp. for cup of berries.

It's only for Santa and Mrs. Claus today---the rest of the elves are resting in their homes.  
Sprinkled with almonds, these waffles are festive for sure.

We have gone through our stash of lingonberries from IKEA
which is a favorite topping with pancakes.
But, I cooked the berries down just to get a good juice going.

The secret to divine waffles is to separate the eggs, and beat the egg whites and fold them in.

Recipe for Homemade Healthy Pancake/Waffle Mix

3 cups of unbleached flour 
3 cups of whole wheat flour
3 cups of long cooking oats
6 Tbsp of Baking Powder
2 Tbsp of salt
3 Tbsp of Baking soda
2/3 cup of ground flaxseed
2/3 cup of sugar (or add applesauce/fruit/or sugar as you use it: 
(1 1/2Tbsp equivalent per 1 1/2 cup mix)
sift ingredients together and store in tight container.

Recipe for pancakes for 4
1 1/2 cups of mix
2 eggs blended -or egg beater equivalent
2 Tbsp vegetable oil
1 tsp. Vanilla extract or your choice
(sugar/fruit to taste-we often use apples chopped up)
1 to 1 1/2 cups of low-fat buttermilk or milk
add nuts, fresh fruit or dried fruit if desired.

Mix all ingredients---quickly until blended, 
fry on griddle, enjoy!

Waffles are made same as for pancakes, except separate eggs.
 Blend in mix as above with egg yolks,
then whip whites until light and fluffy fold in, 
and use 1/3 cup of batter per waffle. Makes 8 waffles, light and fluffy. 

Extra pancakes or waffles I freeze, for a quick breakfast.

I have no idea where this recipe originated, but it has been tweaked from a basic 
pancake recipe over the years (30+).

Halloween and Pancakes:Windhill Pancake Parlor


Tucked away in northeast Illinois is the sleepy river town of McHenry, Illinois located on the picturesque Fox River. One of our favorite places to venture for breakfast is Windhill Pancake Parlor a block away from the river. It's one of those wonderful family places, filled with antiques, collectibles, teacup chandeliers and a bank teller's cage for a checkout.

Looks pretty standard and even this century with a new digital sign. 
But let me say, this place has a long history of celebrating holidays.

In the vestibule next to the candy machines---Look who greets you with a severed 
head on a tray. He looks real...and like he knows a secret.

First of all, the food is fabulous...they serve breakfast, lunch and dinner, and we have never been disappointed in thirty some years. From pancakes to Fish Frys and Fish boils, all in the midwest tradition of hearty farm food. Fresh and tasty!

Zombie window...and spiders everywhere! Brains  and creatures hanging from the ceilings.

A cast of 69 employees and volunteers decorate the entire restaurant. And it is different every year.
Two deep windows at the back of the parlor are staged ---spooky-scarey!

DIY Desperation Breakfast


Croissant Roll-ups!

In my October frenzy of trying to clean (GREEN) out my cupboards of OLD food stuffs, and the refrigerator and freezers, I managed to let our food stores dwindle to starvation level.

This morning...no eggs or eggbeaters, no milk/or evaporated milk, one piece of dry bread, no juice, no bacon, ham, or sausage...but we had coffee, thank heavens. We are usually big breakfast eaters as we are always busy in the mornings. As my husband and I split a heel of bread...yugh...I thought of this!


In the drawer was a roll of Pillsubury low-fat crescent rolls, a package of low-fat smoked turkey deli-meat, and a hunk of mild cheddar cheese--all a base for what turned out to be a NUMMY breakfast.



Starving, we pulled apart the crescent dough, Hubby was fast on this, 
I had to catch up with the camera.
I placed a half a piece of turkey (next time will place both halves on)


and about a tablespoon of shredded cheddar cheese to the dough.




We added a dab of lingonberries (IKEA)---or this could easily be cranberries, or applesauce.



At this point they really looked good enough to eat. (Can't you tell we are hungry?)




We did a quick roll up, and placed them on parchment paper, popped them in the oven at 375 degrees for about 14-15 min.


They came out toasty brown and bubbling, (all the ingredients are precooked anyway) and these were ready to serve.


And were absolutely nummy, roughly 130 calories each as made. We each ate two and split a half an apple and another cup of coffee.


They were actually so good, next time I need to bring a brunch item, I will make some up with some ham/turkey and maybe some brie, with the lingonberries. I popped the other four into the freezer for a quick microwave breakfast in the future.

Now to clean the fridge and go shopping!
