Apple Pies, Apple Sauce and Family Working Together.

After a long haul outside last Sunday dealing with leaves on our 1/3 of acre, the family day was a total work day. 

Then, we had community apples and made pies for the freezer. Hubby and I both come from families that did projects and cooking together. You are never too old or too young to help in the kitchen.

The apple peeler got a work out and so did the Grand, now 13. She was a star at peeling on our OLD crank peeler.
(OUR peeler peels, cores and spiral slices the apples nice and thin.)

Don't tell our Grand I posted this. LOL!

Short on time, we cheated this year and used purchased pie crusts for nine inch pies and couple of deep dish, too.

Here the Grand pokes holes for her signature, double hearts, in the crust for air holes, 
We usually do a wheat pattern which was  
Grandma Fern's signature. 
 Each finished pie is sealed in a bag and quickly frozen.

Here I am mixing Streusel for tops of a few pies. Hubby's and my favorite.

Top Crusts are great, but Streusel is a wonderful alternative. I use real Butter, Flour, Cinnamon, Sugar and Oatmeal in place of some of the flour. 

This makes a hearty Streusel, and it crisps up extra nice. 
Or, you can use nuts with the flour mixture for cakes, pumpkin pies, etc.

Frozen APPLE PIES

Recipe I've adapted  from an old Betty Crocker Pie and Pastry book 1970ish. 

9" Apple Pies.
Unbaked Pastry for top and bottom of pie, your choice.

5-6 cups of thinly sliced/peeled apples 
(we use Gala or McIntosh)
We cut these into  lemon water 1/3 cup to half large bowl of water, scoop the apples into drainer after a few minutes in the water.
 (this keeps the apples from discoloring)

Sift and mix: 
1/2 cup of sugar, 
1/4 cup of flour,
1/2 tsp nutmeg
1 TBSP of Cinnamon
and a Dash of salt. 

Toss the apples in the mixed flour mixture until they are totally coated. Any additional mixture/juice in the bowl pour over  top your apples when in the pie shell.
Heap the apples high in the center and off the edge so you can seal the top crust.
Dot the top of the pie with 3 pats or more of butter/margarine.

(This will melt and soak through the pie...and helps thicken the delicious juices).

 After applying crust pierce generously across the surface for steam to escape, do your own designs.

 Add your top crust or Streusel.

Quickly bag and Freeze. 


Streusel for 9" Pies,  coffee Cakes, or Muffins.

1/2 Cup of flour (I've use unbleached, whole wheat or oat flour)
1/2 cup of uncooked oats, like  for oatmeal
1/2-2/3 cup of Butter or Margarine
1/2 cup of packed Brown Sugar
2 tsp. cinnamon or  1tsp Ginger and 1 tsp Cinnamon
dash of Salt

Combine by cutting the mixture with a pastry blender until lumpy
I end up with fingers in there smooshing the ingredients together until it is a perfect crumble. Gently heap on the apples and press the streusel mixture in.

Good for one heaped 9"- 10" pie.

Baking Frozen Apple pies. 

Place frozen pies on a cookie sheet. 
Start in hot oven at 400 degrees for 30 min.
Turn down oven to 350 and bake until done at least an 1 hour-1 1/2 hours, check when juice begins to bubble from all parts of the pie, then it's done.
You can cover the edges of the crust with aluminum foil half way through to avoid over browning.

WE MADE 11 PIES! My son had to take most home for his freezer, ours is full.

NUMMY, we serve warm slices of Apple Pie with Ice cream or non-Dairy topping.

PS- We also made 7 pint jars of Apple Sauce and 3 pints of Apple Juice canned from the waste of peelings and the  smaller apple cores. 

An OLD REDO
Another great way to save $$$  is
simply cook the apple peelings and cores in a large kettle with a bit of water to keep from burning--simmer until the apples begin breaking down. Stir often. When cool run the mush through an old crank juicer with fine mesh. I ran my apple mush through about 5 different times until the waste was quite dry.  All the seeds and core bits are pushed out for the compost pile. I strain the watery sauce to separate the excess juice and heat both the juice and sauce to a slow boil,
ladle into jars,  add the lemon juice, and also put those  jars in the canner to process.

Canning: add 2 tsp of lemon juice to each hot filled pint jar, add hot metal canning lids and process closed jars under boiling water for 20 minutes.  
You can use a canner or a large pot with a spacer/trivet inside the kettle, so the jars don't come in contact with the kettle on the bottom or sides.

Since I had 10 jars, I did use my big canning kettle.
Unsweetened Applesauce is healthy and a great use of waste, and the juice will be great to add to many things!
Don't forget to compost the rest for healthy soil.

Thankful in Antique Post Cards, Kind Words and Images!

  Happy Thanksgiving to ALL! 

To all my blogging friends, family and friends, just a few wishes from vintage postcard images and a photo.



Some of these have been in my files since 2007, some are from Graphics Fairy---thank you to her for all that she shares.


Hoping for Peace and Prosperity...especially the Peace!


We mustn't forget our Bounty. We will continue to plant a garden in good times and bad. Next year, I hope to really be able to get it going at full capacity again.


Take time to enjoy family and friends and give Thanks however you choose,
I love that these old cards sometimes had family greetings on the back.


I hope you have wonderful family holidays and Don't forget to eat some turkey!


Turkeys are such interesting birds...

and have been joyfully celebrated over the centuries. 

May all your Holiday WISHES come true...remember drying the wishbone, ours would hang in the window until Christmas and then it was broke to gift us secret wishes.

I wish for PEACE and TRANQUILITY...don't tell anyone.

Everything has a Season: Turkeys in the Yard!

Happy Sunday to All.

   Friday and yesterday we removed all the 'Halloween and Spooky' stuff from the yard, cut the grass and cleaned up. Saturday I came home from a thrifting trip to see this in the front yard.

They do make me smile....a bit of color in this November year which can be quite dreary here in Chicagoland. I swear you can hear them gobbling...!
That will be it for decorating until November 29th.

ONE precious holiday at a time. That doesn't mean I don't think about it. Don't be silly.
But, this time of year, I always think of this song by the BYRDS from the 60's. 
At the time, I thought it was actually a war protest song, but in my old age, it is also a guide from 
(Ecclesiastes 3) on how to live.





 Working retail/wholesale most of my life has cured me from starting Christmas in JUNE,..UGH! There is time for EVERY SEASON.
PLEASE, Take time to enjoy what you have
 Right NOW!

Seasonal Side NOTE....
Last weekend Sunday our kids were here helping with the yard. 
Always---they leave things behind....Son the hat, Grandgirl her earphones. Glasses are mine that have already lost a lens ($ store readers). So this is what I did, to send a photo to remind them..

He looks a bit like my son this way, without his signature 'smirking grin'. I bought this pumpkin to bake pies  for Thanksgiving.


I must say the Living Room pumpkin wears it well!
LOL...makes me smile, AGAIN.

The Kitchen for Thanksgiving or the LOST HOLIDAY!

Wow, only two weeks away...Thanksgiving is just around the corner!

Saturday I went shopping with one goal in mind, to find some cocktail or luncheon napkins for Thanksgiving for the snack and dessert tables...NOTHING with rich colors or even a vibe of Thanksgiving. I believe it has become the LOST HOLIDAY...sadly!

Thanksgiving was always my mom's holiday, while Grandmother's had Christmas. She fussed and fiddled, and her home was always in earth and grass tones...so was perfect for the holiday.

I keep a lot of warm tones in our home also, despite all the blue and white.

The sunflower arrangements are for the moment still in the kitchen, I added some dark berries and some blue wild grasses, just to keep the Fall theme going. I may switch them out for dried look Hydrangeas before the holiday.

My last post I talked about cleaning---I did the windows, sills, high shelf, all the pottery items and the blinds (they were disgusting) and the floors.

I also added new greenery (Eucalyptus garland and fresh LED lights) above on shelf. The other stuff was quite old, and brittle, the lights were shot and not LED. 
All the Danish plates are very old, some from 1911, even and one from 1898. 

This morning I tackled the refrigerator which is quite empty at the moment, and chucked all the 'old'--what was it....stuff! Garbage day tomorrow so all that suspect stuff will be gone.

I didn't drag up all my 'Fall' dishes, but supplemented the blue and white with color, mostly naturals, dried gourds and dried flowers.

It's been four years since I dragged out my painted canvas artisan Pilgrims..upside they are heavy and secure my Turkey Platter into the Cabinet. That platter is HUGE.
A small fresh pumpkin and a few other multicolored pieces help finish this. 
Decorating is always a work in progress, and who knows what will be added or subtracted by the Holiday!

I can't give up my broom lady with her Danish proverb, "If everyone swept their own stoop, the whole world would be clean!" A great reminder to mind yourself and your own stoop! 

The arrangement is faux, but with natural grasses added in a tall blue glass vase. It really brightens up this corner which can be quite dark.

A full view of the shelf---everything on here is really antique except for the Pilgrims, the teapot is maybe from the 50's, everything else is really old.

Our side buffet, now hosts my pots of fresh herbs: Parsley, Thyme, Rosemary and Oregano. 
My Sage from the garden is drying on the back stairway...really is a recipe for Turkey day!

My favorite Teapot from a vintage dealer on Etsy is next to a blue stoneware crock I have had for over 50 years. The shoe is my Granmother's, while the little gnomes were found in a thrift store, they are porcelain and very nice. The homespun tablecloth was also Grandma's and is so soft from many years of washing it no longer needs to be ironed...YAY!

My Happiness is HOMEMADE sign is a reminder...to not BUY, but reuse and redo.
Still on the list to do are the cupboards with glass, amazing how scrambled the contents can get in a year. And, the sink window Hubby is going to have to do---ugh, that's a chore, but still needs to be done.
Our silver pieces haven't been used for awhile, and 
I need to choose which dishes to use, and tablecloths. 
I will use cloth napkins for the dinner table if I can find them.

The giant blue enameled coffee pot was minus a lid and found in a thrift store for a song. Maybe I will switch out the sunflowers, right now it's fine or I'll move it to the porch. One thing we can't redo or reuse is our settee and coffee table on the front porch.

This is the last photo of the table and the gold cushions to the right of the photo. We've had it for at least 20 years and all the legs had totally disintegrated. 
We took it apart and put the glass in recyclables, and stacked the metal pieces on the driveway. Two hours later the local metal pickers took it...and it will go to the recycle center. The cushions were really beyond hope and are ready for garbage pickup tomorrow.

We have all winter to figure out what we want to put on the porch, meanwhile, I brought up our metal bench from the backyard. Tonight we sat on the porch after ALL the Yardwork was finally done and actually had a beer, first one for me this year.

So with the kitchen 90% done, tomorrow I have to move on to the living room and the buffet. I'll serve snacks and dessert from here, so seasonal decor will be along the back, and I will be picking from my old items from the family stashes and of course, pumpkins, a turkey and some more Pilgrims. 

So we are getting ready to GATHER!
